I LOVE shishito peppers, my good friend Annick introduce them to me a couple years ago. You don’t have to do anything fancy just sauté them with salt!
Sautéed Shishito Peppers

- 1 lb of shishito peppers
- 2 tablespoons of bacon fat (or olive oil/avocado oil)
- Salt to taste
- In a large skillet on high heat add the fat, once the pan is hot and the fat is melted and hot add the shishito peppers and saute for a few minutes. Tossing and turning them frequently. The peppers will become a little soft and it's ok if some are a little black in some places but not all over.
- When they're done, toss them with salt.
- Slide the peppers into a bowl and serve them hot.
